Gases may be able to significantly extend the shelf life of your baked & dried products.

Baked products like wraps, biscuits, pita bread, naan bread and the likes, moisture content is typically lower. Moulds generally cause the spoilage and as these moulds are aerobic, we can reduce their growth by reducing the oxygen content in the packaging. The ambient air in the package is replaced with a gas mixture (generally Nitrogen and Carbon Dioxide). This excludes much of the oxygen required for the mould to grow.

Dried products like coffee, potato crisps, nuts and seeds have unsaturated fats. These fats are susceptible to oxidation and therefore their shelf life is reduced. Replacing the ambient air with Nitrogen may extend their shelf life by reducing the available oxygen.
